Briquettes or charcoal: when to use which?

Do you also never know whether to use briquettes or charcoal? Often people think it doesn’t matter, but nothing could be further from the truth. Choose wrong and your barbecue party can fail even with the best meat.
Charcoal – Fast & Intense
If you have an open barbecue, charcoal is most suitable. Charcoal can reach a higher temperature and lights faster. With an open barbecue a lot of heat escapes, so charcoal is better suited. Charcoal is also perfect for grilling thin slices of meat and satay skewers: because of the heat from the coals these only need a short time on the grill. The downside of charcoal is that it doesn’t last as long as briquettes.
Briquettes – Long & Steady
Briquettes are most suitable for a closed barbecue. The big difference with charcoal is that briquettes maintain a constant temperature for longer, which is suitable for cooking large cuts of meat. If you want to make a tasty pulled pork, for example, you’ll definitely need a closed barbecue and therefore briquettes. Compared to charcoal it takes a little longer for the briquettes to reach temperature, but once they are hot they last longer than charcoal.
